All-Day Beef with Wild Rice and Carrots

This is another one of my favorite 1-pan dinners that slow cooks all day and yields a delicious dinner with very little work, especially at dinner time when I am the most tired and wanting to get a quick, hearty meal on the table as fast as possible.

Beef with rice and carrots

Add a green salad and fresh sliced apples for a delight to the eyes and nourishment to the body.

These amounts are to serve 2.

Heat 1 Tablespoon of cooking oil of your choice in a heavy bottom pot.


4 ounces of beef cut into bite sized pieces with

1/2 cup chopped onion.

When browned, stir in

2 1/2 cups water

1/2 cup whole grain brown rice

1/4 cup wild rice

1 teaspoon soy sauce

1 teaspoon Kitchen Bouquet browning & seasoning sauce

1/4 tsp each of garlic powder, turmeric powder, and oregano

18 baby carrots

Bring to a boil, cover, and place in a thermal cooker such as a Saratoga Ja

Let sit all day, or at least 4 hours.

When you’re ready for dinner, take the pan out of the insulated jacket, put it on the stove and bring to a boil.

Mix 3 Tablespoons corn starch with 3/4 cup cold water.  Stir into the boiling stew and keep stirring until it comes back to a boil.

Remove from heat.

Adjust the seasoning with additional salt and pepper as desired.
