This one-pan dinner has a delicious taste surprise as well as lots of fiber and a good blend of nutrients.
Prep time: 5 minutes Cooking time: 20 minutes Serves 3
Ingredients:
9 oz of chicken breast – either fillets or strips
1/2 cup teriyaki marinade
1 box Rice-a-Roni, chicken and broccoli flavor
1 head of broccoli
2 cups water
3 oz shredded cheese (I used Monterey Jack and cheddar in the photo)
1 Tblsp flax seed
1 Tblsp butter
Place chicken in marinade, turning to cover. Cut broccoli & shred cheese so they are ready to add at the end of the cooking time.
Melt butter in skillet with lid. Add rice and vermicelli from the Rice-a-Roni and brown as per directions on the box.
When lightly browned, remove from heat. Stir in seasoning packet. Place chicken pieces over the top, then add the water.
Cover and return to heat for 15 minutes.
Remove from heat, add broccoli, sprinkle on the flax seeds and cheese. Cover and return to heat for 5 more minutes or until cheese is melted.
My husband doesn’t usually care for teriyaki, but this dinner got rave reviews and a request that I make sure I fix it again – SOON.
