Summer is here and with it, zucchini! This wonderful vegetable/fruit that can be used in so many ways is marvelous.
One of my favorite things to do with zucchini is make this deliciously spicy bread.
I never had a problem getting my children to eat their veggies when I cooked them into this bread.
Set oven to 325 F.
3 eggs 2 cups grated zucchini
1 3/4 cups sugar 1 teaspoon vanilla
1 cup oil
3 cups flour 2 teaspoons cinnamon
1 teaspoon salt 1/4 teaspoon nutmeg
1 teaspoon baking soda 1/2 teaspoon baking powder
Optional add 1/2 cup chopped nuts and/or 1/2 cup chocolate chips
Pour into 2 well greased loaf pans 8 1/2 x 4 1/2.
Bake 1 hour or until loaves just begin to pull away from the sides of the pan.
Coolin in the pan on a rack for 5 minutes, then turn out onto the rack to finish cooling.
